As a wildly popular chef of many Panhandle-area restaurants, Chef Derek Langford knew his way around a kitchen. With his connections with farmers, ranchers, and fisherman, he knew where to forage for high-quality, local ingredients. From his leadership at the restaurant Firefly, he felt sure his fans would follow him on his next adventure.

Langford switched gears from a stand-alone restaurant to his 18-foot mobile kitchen. He equipped the bright orange truck with world-class commercial-grade equipment and a custom-built mobile kitchen to accommodate a feeding frenzy. A table laden with condiments and a cooler set aside with bottled sodas and water completes the outdoor picnic. This came about in November 2019 and continues to roam all over Panama City and to parts unknown.

Menu Inspired by the Wild

Wild game inspires most dishes on the menu and puts an emphasis on local foods. The grass-fed meat they provide, though, originates from Montana and Georgia and features no hormones. You will sink your teeth into some of the freshest, juiciest meat you can find, whether dining on elk, lamb, or venison. It may just be the absolute best burger you’ll ever find!

If you order the handcrafted elk burger, it comes with a swath of melted Havarti cheese, topped with arugula and a fresh tomato, and covered with H&G aioli. The H&G stands for Hunt and Gather Catering and is a secret recipe of the chef.

Don’t forget the side of hand-cut fries to go along with your burger–maybe ones loaded up with tangy, house-cured pancetta, creamy Havarti, H&G aioli, and peppered with scallions!

Craving a taste of ribs? Try the slow-cooked Colorado lamb ribs doused with fresh herbs and slathered in a creamy kimchi aioli. Feeling game for another dish? The venison osso Bucco, a braised venison shank featuring Gouda cheese and an IPA sauce, comes with stoneground grits.

Get in your daily dose of greens with The Nomad Brussels sprouts masterpiece. Chef Langford flash fries the sprouts, pairing them with pecans, pancetta, and pecorino and drenches them in a honey vinaigrette.

If you’re feeling stuffed after such a feast, bring your food festival back home in a to-go box. They’re biodegradable and will keep until you reach your home base.
